Children who grow and harvest their own vegetables eat them at dramatically higher rates than children who only encounter those vegetables at the table. The connection between growing and eating is one of the most powerful nutrition interventions available — it works not through instruction but through pride of ownership and genuine investment in the outcome. When a child picks a tomato they have watched grow for weeks, that tomato tastes different to them than any store-bought one ever will.
Each vegetable has its own readiness signals. Before the growing season, read the seed packet together and note the "days to maturity" — then count down on the calendar. Look up ripeness indicators for each vegetable: color change, firmness, size, smell. The skill of knowing when to harvest is itself a rich observational science lesson. Establish a "harvest check" routine where children inspect the garden every 2–3 days — readiness can change quickly in summer heat.
